I Did It. (Plus a Recipe! Easy Breakfast Sausage Egg Muffins)

Hello, again!  I apologize for the lack of posts, but it’s been crazy busy around here!  I’ll explain…

I have thought about the day that I would sit down and write this post for a full year, ever since Lisa wrote this post on her blog.

Finally, it’s my turn!

You see….

I DID IT. 

I GOT ACCEPTED INTO NURSING SCHOOL!!!

Those words still don’t seem real to me.

I decided I wanted to be a nurse during my junior year of college, and even though it took FOUR YEARS to get here, I am overjoyed, overwhelmed, and so thankful that I have made it to this point. I experienced several heartbreaking setbacks on the path to nursing school- some I’ve discussed here, and some I haven’t.  The point is, I now see that things really do happen for a reason.  My #1 goal was to get my nursing degree from my alma mater, but I honestly felt like it was unattainable.  The program is extremely competitive, and I thought there was no way that I could possibly get the grades and test scores necessary to get in.  Well, I worked my butt off and learned a lot about my capabilities along the way, and today, I can say that this is the accomplishment that I am most proud of in my life.

The program itself is 15 months and full-time.  It starts in May, which is when my social life as I know it will be over :) .  As for the blog, I will do my very best to keep recipes coming as often as I can, and I appreciate your patience as I make this important transition in my life.

Alright, enough with the serious stuff!

How ’bout a quickie breakfast recipe?  These are so easy to make, and they’re great for quick pops of protein when you’re on the go! (I see lots of these in my future as a nursing student)

Breakfast Sausage Egg Muffins

Servings: 12

Ingredients:

10 eggs

1/3 cup liquid eggwhites (I used EggBeaters)

6 breakfast chicken sausages, chopped (I used Alfresco)

1/4 cup milk

1/2 cup shredded cheddar

fresh cracked black pepper for the tops

Directions:

-Preheat oven to 350 degrees.

-In a bowl, beat together the eggs, eggwhites, and milk until well combined.

-Add the sausage.

-Spray a muffin tin with nonstick spray.

-Pour the mixture 3/4 of the way up each muffin cup.

-Top each with a sprinkle of cheese and a turn of fresh cracked black pepper.

-Bake for 15 minutes, or until the center no longer jiggles.

Other recent meals:

Lots of Whole Foods hot bar dinners around here.  I like to make a big salad with a little of everything on top :) .

Amy’s Organic Light in Sodium Chunky Tomato Bisque, Chobani Strawberry Banana Greek Yogurt, and a Kashi Banana Chocolate Chip bar for lunch (this was a particularly delicious day).

And for some post-workout fuel, chocolate protein shakes.  Yum!

    Carly I love your blog! I like that your diet is not unrealistic and that now and then you give yourself a little cheat or so. If you want to try a good green smoothie for breakfast you should consider a recipe I found online that tastes sooo good!

    this will make quite a bit so you can cut down to make less

    about 4 cups strawberries
    I fill the next top half of my vitamix with spinach
    a few drops of stevia
    about 4 tspns of chia seed (this stuff is wonderful its high in protein, omega, and fiber and is tasteless)
    then add water (filled about halfway, but if you have time try another trick and juice a few cucumbers to add instead of water, the fresh, cool flavor tastes amazing)

    the color of the smoothie isnt really green but it still has a lot of greens minus the leafy taste. There are other green colored smoothies I enjoy for breakfast as well they give me a much needed boost to start the day. trust me you will need all the energy you can get for nursing school I watched my sister go through it a few years back and she was drained most of the time. good luck!

    Congrats!!! I’ve been loving eggs for breakfast. I never get tired of them! Especially eggs over medium with some bread dipped in the yolk, mmmm! Now that it’s getting warmer, though, I think green smoothies will be in the picture
